Ming-Hsu Chen is a Postdoctoral Research Scientist in the Department of Food Science at Purdue University. Ming-Hsu holds a Ph.D. degree in Agricultural and Biological Engineering and specializes in the area of functional carbohydrates, processing engineering, and industrial microbiology. Before joining the Lindemann group, Ming-Hsu gained research experience at the National Taiwan University, Academia Sinica and the University of Illinois studying carbohydrate binding proteins, oligosaccharide manufacture, cereal processing, and biofuel conversion. He is currently focused on identifying the interactions between food carbohydrate structure and gut microbial communities.
