Development of non-invasive quality measurement techniques and novel food processing technologies Specific research projects include the following:
  • Development of NMR and MRI methods for food processing 
  • Development of food applications for radiant frying technology 
  • Development of food applications for nonthermal plasma technology 
  • Characterization of antimicrobial activity in shell eggs with carbon dioxide treatment

Teaching
3-credit computer based Food Sanitation Course

Extension
  • Provide food entrepreneur workshops and technical assistance 
  • Provide HACCP and sanitation workshops for food companies 
  • Respond to inquiries on food processing and food regulations

Industrial
  • Provide technical assistance to food companies on commercialization of new technologies 
  • Provide expert witness testimony in legal cases
