Research Program

Dr. Latour's discovery appointment complements both his learning and engagement programs. Overall, his work is centered about the manipulation of fat tissue and has worked on a wide range of animals as a function of lipid disorders. At present, our laboratory is working on the impact of firm vs. soft bellies in bacon slices as it relates to premium slices vs. ends & pieces.
