Graduate Student Profile - Anael Kimble

anael-kimble.jpegAnael Kimble successfully defended her M.S. thesis on November 13, 2023. Anael is originally from Alexandria, Virginia. She obtained her Bachelor's degrees in Food Science and Food Chemistry from McGill University in Montreal, Quebec, Canada.

Anael's thesis was entitled, "Reactive extrusions of bean flour." Her research explored how enzymes targeting dietary fibers isolate protein and starch from bean flours. 

Anael was mentored by Dr. Owen Jones. Other members of her graduate committee included Dr. Senay Simsek and Dr. Osvaldo Campanella. Anael endorses the Purdue Food Science graduate program, saying it's a great place to learn.

During her time at Purdue, Anael had the pleasure of working as a product development intern for Conagra Foods in Omaha, Nebraska. Anael's future plans are to continue her education to obtain her Ph.D. Congratulations, Anael!
