Graduate Student Profile - Kamrun Nahar
Kamrun Nahar successfully defended her M.S. thesis on April 23, 2025. Kamrun is originally from Singapore.
Kamrun's thesis was entitled, "Sugary-1 (SU1) sweetcorn extract as a multifunctional emulsifier and microencapsulation wall material". In her research, Kamrun hypothesized that sugary-1 extract from sweetcorn has comparable or greater capability than acacia gum and OSA-starch, to form and stabilize orange oil emulsions, and comparable or greater microencapsulation capability than acacia gum. Results demonstrate that the physical and chemical stability of sugary-1 extract-formed emulsions and microencapsulates is enhanced, allowing it to be an alternative for a plant-based, natural, clean-label compliant multi-functional material. Cryo-TEM imaging also indicate the formation of Pickering emulsions by sugary-1 extract.
Kamrun's advisor was Dr. Yuan Yao. Other members of her graduate committee included Dr. Owen Jones and Dr. Ganesan Narsimhan. Kamrun says she chose Purdue Food Science because it is "among the top 10 in the country for Food Science programs and reputable."
