Graduate Student Profile - Kamrun Nahar

Kamrun Nahar with Dr. Yuan YaoOn April 23, 2025, Kamrun Nahar successfully defended her Master of Science thesis. Born in Bangladesh and raised in Singapore, she completed her undergraduate studies in Biomedical Engineering at the National University of Singapore.

Kamrun's thesis was entitled, "Sugary-1 (SU1) sweetcorn extract as a multifunctional emulsifier and microencapsulation wall material".  In her research, Kamrun explored the use of Sugary-1 (SU1) sweetcorn extract as a multifunctional emulsifier and microencapsulation wall material. Her work focused on harnessing the natural components of sweetcorn to improve the stability and functionality of food-grade emulsions and encapsulated bioactives. This research contributes to the development of more sustainable and plant-based ingredients in the food industry. Kamrun conducted her experiments at Purdue’s state-of-the-art facilities, including the Bindley Bioscience Center and the Whistler Center for Carbohydrate Research, with the guidance of Dr. Yuan Yao and support from a  team of mentors and collaborators.

When she was selecting a graduate school, Kamrun says she chose Purdue University for its strong reputation in food science research and its collaborative, interdisciplinary environment.

Kamrun's advisor was Dr. Yuan Yao. Other members of her graduate committee included Dr. Owen Jones and Dr. Ganesan Narsimhan.  

Looking ahead, Kamrun plans to pursue a career in research and development within the food industry, where she can apply her knowledge of functional ingredients to create innovative and sustainable food products.
