GRADUATE STUDENT PROFILE - Guangyi Shen
Guangyi Shen successfully defended her MS thesis on June 26, 2026. Guangyi is originally from China where she completed her bachelor's degree at China Agricultural University.
Guangyi's thesis was entitled, "Modulation of colonic inflammation and gut microbiota by watercress and red lentil." This research investigated the effects of dietary watercress on colitis using a mouse model. The results showed that watercress helped reduce inflammation and improved colon health, suggesting its potential as a functional food to support gut health.
Guangyi was advised by Dr. Weicang Wang. Other members of her graduate committee included Dr. Da Chen and Dr. Tingting Ju.
Guangyi was drawn to Purdue for a multitude of reasons. "I chose Purdue because of its excellent Food Science program, strong research environment, and opportunities to work with experienced faculty. I believed it would provide the knowledge and research experience needed to prepare me for a future career in research."
For her next giant leap, Guangyi plans to pursue a Ph.D. degree in Food Science. Congratulations, Guangyi!
