Graduate Student Profile - Christian Mensah
Christian Mensah successfully defended his M.S. thesis on November 11, 2024. Christian is originally from Apam, Ghana. He obtained his bachelor's degree in nutrition and food science from University of Ghana in Accra-Legon, Ghana.
Christian's thesis was entitled, "Pasteurization of Honey using 915 MHz Microwave Heating: Effects on Hydroxymethylfurfural (HMF), Crystallization, Physicochemical properties, and Microbial Safety." His research evaluated the effectiveness of 915 MHz Microwave heating as an alternative to conventional methods for honey pasteurization.
Christian's mentor was Dr. Deandrae Smith. Other members of his graduate committee included Dr. Dharmendra Mishra and Dr. Brock Harpur.
Christian says he was drawn to Purdue Food Science because of its strong ties to the food industry and its reputation as one of the top food science programs in the United States. He adds, "Purdue Food Science has top food science professors!"
Christian recommends Purdue Food Science to prospective graduate students because of the department's resources to help prepare students for their future careers. "It’s a great program that offers lots of opportunities to explore."
Christian had a few experiences that enhanced his experience as a graduate student at Purdue. During the summer of 2024, Christian had the opportunity to work as a Research & Development Intern with Chobani in Twin Falls, Idaho. Back on campus, Christian was the Organizer for Purdue University Ghana Students Association (November 2023-December 2024), and he was a member of the Purdue chapter of Minorities in Agriculture, Natural Resources, and Related Sciences (MANNRS). Additionally, Christian presented his research at various competitions, earning second place at the research poster competition at the Purdue Food Science Industrial Associates meeting in April 2024. In 2024, Christian attended the University Consortium on Health, Food, and Agricultural Resilience (UCHFAR) where he served as a Graduate Student Ambassador and note-taker, earning a letter of appreciation from the US Department of Homeland Security for his contributions.
After graduation, Christian will return to Chobani as a Research & Development Scientist in Twin Falls, Idaho. Congratulations, Christian! We wish you all the best!
