Graduate Student Profile - Edward moncada

Edward Moncada in his graduation gown in front of the clock towerEdward Moncada successfully defended his PhD dissertation on June 19, 2025. Edward is originally from Tegucigalpa, Honduras. He obtained his bachelor's degree from Zamorano Pan-American Agricultural School.  

Edward's dissertation was entitled, "The Role of Dietary Fiber Properties and Host-Specific Conditions in Fiber Tolerance." His research examined how bacterial dysbiosis, a common condition observed in individuals diagnosed with ulcerative colitis, and fiber properties influence fiber tolerance levels. Edward examined how some fibers, like inulin, negatively affect these immunocompromised people.  

Edward's advisor was Lavanya Reddivari. Other members of his graduate committee included Bruce Hamaker, Tim Johnson and Mario Martinez.

Edward says he was drawn to Purdue Food Science because, "The reputation of the Food Science program is highly recognized." Edward also appreciated being involved with the Whistler Center for Carbohydrate Research, which provided exposure to industry and the opportunity to interact with industry professionals.

Edward had several experiences that enhanced his experience as a graduate student at Purdue. On campus, Edward was a member of the Association of Zamorano Alumni - ZamoBoilers, and he served as the secretary and social media manager of the Purdue Food Science Graduate Student Association.

Edward earned several awards and recognitions as a graduate student, including:

  • Young Investigator Underrepresented in Nutrition, American Society of Nutrition (2023)
  • Kirleis Graduate Student Award, Whistler Center for Carbohydrate Research (2024)
  • First Place IFT Oral Competition, Carbohydrate Division, Institute of Food Technologists (2024)

Edward's next chapter will take him to Oregon State University where he will work as a postdoctoral scholar in Anna Hayes' laboratory. Congratulations, Edward, and best of luck!
