ANSC 360 Product Show highlights meat innovation

Students in the ANSC 36000: Muscle Food Production and Safety course showcased their value-added meat products during the class’s annual product show on December 4.

The course, taught by Stacy Zuelly, clinical associate professor of animal sciences, focuses on transforming lower-quality cuts of meat into innovative, market-ready products. Throughout the semester, students apply principles of meat science, food safety and processing to add value through formulation, flavor development and product presentation.

Below are the student teams and their value-added meat products showcased during the ANSC 360 Product Show.

Spicy Burger Queso Bomb

Boiler Bites

Bacon Pepperjack Poppers
